Ashley's Favorite Eggs

It's true. Whether it's over easy, sunny side up, scrambled, or poached, everyone has a favorite way they like to prepare their eggs. I was in Healdsburg, CA for a weekend with some friends a while back, and my friend David scrambled up a recipe for breakfast using whatever he could find in his fridge. It was so good that I started making my eggs similarly ever since. I've altered the recipe to make it perfect for my liking. Here's my favorite way to make eggs!


Servings: 1

Ingredients:

  • 2 large Eggs
  • 1/4 cup Milk
  • 1 Tbsp. Butter
  • 1/4 of an Onion, diced
  • Salt and freshly ground pepper, to taste
  • Freshly shredded Parmesan Cheese
  • 1 small Tomato, chopped

Preparation
:

In a small bowl, whisk the eggs together and then add the milk to the same bowl.

In a saucepan on medium-high heat, add onions and butter. Cook until onions are translucent (about 3 minutes).

Add egg mixture and scramble until the eggs are cooked. While eggs are cooking, add salt, pepper, and shredded cheese to the mix.

When eggs are done, serve with fresh chopped tomatoes and enjoy!
