Parmesan Tomatoes

      Parmesan Tomatoes (adapted from EatingWell.com)


I just came home from work and was in the mood for a quick snack. This little dish can also be served up as a side dish to your meal if you like!

Servings: 2-4

Ingredients:
  • 1-2 Tomatoes, sliced in half horizontally
  • handful of Parmesan Cheese (the good stuff), grated
  • Fresh oregano, chopped (or dry Italian Spices if you don't have the fresh stuff)
  • Olive Oil
  • Salt and pepper, to taste

Preparation
:

Preheat your oven to 450 degrees F.

In the open end of each tomato sprinkle grated parmesan cheese on top followed by chopped oregano (or dry spices). Drizzle a bit of olive oil (not too much) and sprinkle some salt and pepper on top and stick in the oven for about 15 minutes, or until the tomatoes are tender. Enjoy!
