Red Wine Mushroom Sauce for Pasta


I hope everyone had an amazing Labor Day weekend! Mine was full of friends, good music, beer, and BBQ'ing. It's been quite the busy day for me, as I'm sure it was for most anyone getting back to work after a long weekend, and on busy days cooking can be the last thing on someone's mind. Cooking can require a lot of planning, grocery shopping, preparation, and time. Sometimes digging through your pantry and fridge to see what you have to work with is the best route to take for a lazy, yet delicious meal. Which is exactly what I did this evening. 


Pasta is quick. Yes, I know making your own sauce does take more effort then simply opening a jar of marinara, but come on-- you have to admit that's probably the most boring things you can possibly make in a kitchen, no offense. I'm guilty of it too, don't worry. We all are. Spoil yourself a little and make this super quick and easy pasta sauce made from common kitchen ingredients! If you don't have all the ingredients, see if you can substitute something else. This recipe calls for creativity!


Servings: 2

Ingredients
:

  • 1 Tbsp. olive oil
  • Handful of white mushrooms, stems cut off, coarsely chopped
  • Handful of chopped onion
  • 1/2 cup Dry red wine
  • Canned crushed tomatoes (I used a little less than half of a 28 oz can, since that's what I had leftover in my fridge)
  • Kosher salt and black pepper, to taste
  • 1/2 tsp. Italian seasoning
  • Fresh chopped parsley
  • Pasta of choice

Preparation:

Boil some water on the stove for your pasta of choice (I used capellini as it only takes 3 minutes to cook). 

Heat olive oil in a saucepan. Add onions and mushrooms to the pan and cook until onions are translucent (about 3 minutes).

Add the red wine and let reduce to about half (about 5 minutes). 

Add the crushed tomatoes, salt and pepper, and Italian seasoning, and stir occasionally until sauce is fully heated and starts to bubble. Simmer on low until your pasta is ready.

Stir in parsley and serve. That wasn't so bad, was it?
